If you would have asked me what I would miss most about changing to a predominantly vegan diet, I’m sure that tacos would have been one of the top 5 things on my list.
I actually have never really eaten a whole lot of red meat, it just isn’t really my favorite. But in the event that I do eat it, it’s either a burger or in tacos. Although I really love chicken tacos too, I just find it to be a lot more work than throwing some ground beef in a pan and letting it cook.
So in the spirit of Try It Thursday, I decided it was time to take on…Lentil Tacos.
As per the usual, I have included the recipe at the end of the post which I modified from a non-vegan recipe, so I’ll just touch on a couple things.
First things first, the lentils took forever to finally cook all the way. So definitely don’t make this recipe when you’re rushed for time. I made them after a cardio workout and didn’t really read the recipe ahead of time (prepared is not my middle name) and ended up having to eat a little snack before hand.
But the other good news is, these make fantastic leftovers! Yep just as good as the first time.
These are so versatile too, if you would rather not have them in a tortilla you could just as easily make a taco bowl or taco salad. And the topping choices are even more endless!
I am happy to report that the world will still keep turning and this girl will still be able to eat tacos after all, phew disaster averted.
Because let’s be honest, what good is the world without tacos?
